DINAKDAKAN (VIGAN SISIG)
INGREDIENTS:
• 20 kg pork ear (tenga)
• 0.5 kg pork belly (liempo)
• 0.5 kg pork liver (atay)
• 10 pcs chili
• 1 cup mayonnaise
• 1 tbsp peppercorn (ground)
• 3 tbsp ginger (pretty chopped)
• 3 tbsp roasted garlic (light brown)
• 7 tbsp Ilocos vinegar
• Salt to taste |
Procedure:
Bring pork belly and ear to boil with a little salt and garlic then simmer for 1 hour. Drain and set aside (open air). Start grilling the liver (well done) and grill the belly and ears next. Slice the 3 ingredients to a fine cut (bite sized) or to size desired. Put all ingredients except the roasted garlic in a mixing bowl. Put the mayonnaise (instead of pork brain). Add salt or seasoning powder if needed. Garnish with roasted garlic and serve.
Notes:
To enhance the aroma, garnish with shredded green chilis or bell pepper. For a more appettizing taste, use a large Sunnex pan and saute the chili, ginger, and hot onions in garlic and add the other ingredients with the mayonnaise until hot. Serve with roasted garlic on top.
